Bea's Recipe for Basic Asian Soup |

This is a basic recipe I came up with for asian soup. You can have it as is for vegetarian soup or throw in leftover pork or chicken. You can also change the kind of veggies used to what you prefer. Ingredients:
3 cups broth, vegetable, chicken or 3 cups beef |
3/4 teaspoon ground ginger |
1/4 teaspoon garlic powder |
handful chinese noodles, broken up |
1/3 cup red pepper, chopped |
1/3 cup mushroom, sliced |
1/3 cup carrot, chopped |
1 large green onion, sliced |
3 heads baby bok choy, root removed |
1 teaspoon soy sauce |
1/2 teaspoon veg oil |
Directions:
1. Bring to a boil the first 7 ingredients, turn heat down and simmer until veggies are almost done. 2. If using meat, toss in now. 3. Add onion and bok choy. 4. Keep simmering until all veggies are cooked. 5. Add soy sauce and veg oil. |
