Bea's Broccoli Christmas Casserole |

This is slightly different version of the casserole recipes I have seen on this web site. I thought I would post it because it such a wonderful side dish. I got it about 35 years ago from my sister-in-law who served with Christmas prime rib dinner. It's just not Christmas in our house without this side dish. Use a very large skillet. You can make it ahead, and add 15 miutes to baking time if it has been refridgerated. Ingredients:
2 (10 ounce) packages frozen chopped broccoli |
1 onion, chopped |
2 red peppers, chopped |
4 celery ribs, chopped |
1/2 cup butter, divided |
1 cup cooked rice (minute rice if you must but i like regular rice better) |
10 oz.can cream of mushroom soup |
8 ounces cheez whiz |
1/2 cup breadcrumbs |
Directions:
1. Melt 4 tablespoons of butter in a large skillet over med high heat. 2. Saute onion, red pepper, and celery until tender. About 10 minutes. 3. Add Cheez Whiz and soup and heat until melted. 4. Add rice and broccoli and stir to combine. 5. Pour broccoli mixture in a shallow 3qt. casserole dish that has been sprayed with a vegetable spray. 6. Melt remaining butter and bread crumbs. 7. Top casserole with buttered crumbs. 8. Bake, covered, in a pre heated 350 oven for 30 to 40 minutes or untill lightly browned and bubbly. |
