These tasty little muffins are picky-husband approved! They are a great way to sneak in some iron-filled deliciousness without any familial objections! Enjoy! Ingredients:
1 (10 ounce) package frozen chopped spinach, thawed and drained |
1/4 cup all-purpose flour |
2 eggs, beaten |
1/2 teaspoon paprika |
1/2 teaspoon onion powder |
1/2 teaspoon garlic powder |
salt and ground black pepper to taste |
Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 6-cup muffin tin. 2. Mix spinach, flour, eggs, paprika, onion powder, garlic powder, salt, and black pepper in a bowl; divide evenly between prepared muffin cups. 3. Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 20 minutes. |
