This is a family favourite whose name comes from a northern community - they really do look like, well, you know! My youngest daughter loves to make these because they don't have flour (she can't have gluten but oats don't seem to bother her) and the whole family loves them. Read more . It was one of the first things she could bake herself using the microwave.
Ingredients:
1/2 cup butter
2 cups white sugar
1/2 cup milk
1 tablespoon vanilla
2 1/2 cups oatmeal
1 cup coconut
1/2 cup cocoa
Directions:
1. Put the butter, sugar, milk and vanilla in a microwave-safe bowl and heat on high to boil. We do it in three parts - 3 minutes, stir, 2 minutes, stir, 2 minutes stir - but the exact time will depend on your microwave. Don't overdo it or the sugar will get all grainy.
2. Stir in the oatmeal, coconut and cocoa until well mixed but do it quickly so that it doesn't start to set in the bowl.
3. Drop by spoonsful onto waxed paper and let cool to set.
