This is a recipe I obtained from an estate sale in Terrell, Texas in 1992. It is tried and true and very good. Hope you enjoy as much as we do. Ingredients:
2 tablespoons olive oil |
1 cup diced red onion |
1/4 cup diced green bell pepper |
1/2 cup diced celery |
1-1/2 teaspoons chopped garlic |
1 cup converted rice uncooked |
4 ounces smoked sausage cut into 1/4-inch slices |
4 ounces ham cut into 1/2-inch pieces |
2 cans diced tomatoes and green chilies |
1 cup chicken broth |
1/4 teaspoon dried thyme leaves |
1 bay leaf |
2 cans ranch style beans undrained |
Directions:
1. Heat oil in a heavy saucepot over medium high heat. 2. Add onion, green pepper and celery then cook until onions are translucent then add garlic and cook 1 minute longer. 3. Add rice, sausage and ham. 4. Cook 3 minutes to coat rice with oil stirring frequently. 5. Add next 4 ingredients and heat to boiling. 6. Cover and steam 25 minutes. 7. Remove bay leaf then stir in beans and serve. |
