A GREAT SPICY ADDITION TO A BASIC SALAD DISH Ingredients:
6 tablespoons of olive oil |
2 tablespoons wine vinegar |
1/2 teaspoon of dry mustard |
1 teaspoon sugar |
sea salt to taste |
freshly ground black pepper |
4 oz. beans - any type, chick peas, butter beans, or some of the more unusual ones. soaked and cooked until tender, then drained. |
2 tablespoon chopped fresh herbs |
1 heart of celery |
1 green pepper - de-seeded and sliced |
2 large carrots, scraped and coarsely grated |
about 4 inches of cucmber, diced |
1 apple, diced. |
Directions:
1. INTO A SALAD BOWL PUT THE OIL, VINEGAR, MUSTARD, SUGAR, SOME SEA SALT AND A GOOD GRINDING OF BLACK PEPPER . 2. GIVE THIS MIXTURE A GOOD STIR SO THAT IT IS ALL BLENDED 3. THEN ADD THE BEANS, GREEN HERBS AND THE REST OF THE INGREDIENTS AND MIX WELL SO THAT EVERYTHING IS WELL COATED WITH THE DRESSING. 4. THIS IS NICE SERVED WITH WHOLEWHEAT BREAD ABND UNSALTED BUTTER AND , OF COUSE THE WHEAT PROTEIN COMPLEMENTS THE BEAN PROTEIN TO GIVE EXCELLANT NOURISHMENT. ENJOY |
