Beans With Tomatoes

I love beans, especially large meaty ones. Add some cumin, a dried crumbled chile, some oregano instead of the thyme, maybe even a bit of fennel or orange peel.
Ingredients:
* 1/2 head garlic peeled and sliced
* 5 tbsp olive oil
* 1 pinch dried thyme
* 1 small can large white beans, drained and rinsed (about 240 g drained beans)
* 1/2 small can tomatoes (about 200 g weight)
* salt
* pepper
* lemon juice
Directions:
1. Heat half the olive oil over low heat.
2. Add the garlic and cook until well browned but not burnt.
3. Add the thyme, beans, tomatoes then season lightly with salt and pepper.
4. Cook on low heat, stirring as necessary to prevent sticking until the mixture has stopped boiling and started to fry, about 20 minutes.
5. Finish seasoning the beans and add the rest of the oil and a good squirt of lemon juice.
6. Serve as you see fit, with bread, on top of pasta as a light second courseā€¦
