Awesome home made 'baked bean' style breakfast. Perfect with eggs. Super healthy.
Ingredients:
for beans
500g dried cannellini beans, soaked overnight
1 red onion, chopped
2 garlic cloves, peeled
1 large carrot, chopped
1/2 celery stick, chopped
10 sage leaves
1 bay leaf
for sauce
10 sage leaves
2 garlic cloves, peeled and crushed
300g tomatoes (skinned and chopped)
1/2 small dried red chilli, crumbled
Directions:
1. Soak beans overnight.
2. Boil beans in with onion, carrot, celery, sage leaves and bay leaf in water for 90 mins.
3. Drain beans, reserve a cup of the liquid.
4. Lightly fry sage leaves and garlic in olive oil. Add tomatoes and chilli.
5. Simmer for 10 mins.
6. Add beans and reserved water.
7. Simmer for 15 mins.
8. Serve for breakfast on a savoury pancake with a poached egg.
