A SPIN ON THE FRENCH PISTOU Ingredients:
2 bags od baby spinach washed |
1 can of white or northern beans |
1 bunch cilantro finely chopped |
8 scallions- green part only chopped |
8 cloves of garlic minced |
4 chicken legs skinned |
1/3 teaspoon tumeric |
1/3 teaspoon black pepper |
sea salt to taste |
enough water to cover |
1/3 cup extra virgin olive oil |
Directions:
1. SAUTE SPINSH IN OLIVE OIL AND TWO OF THE GARLIC CLOVES 2. LET IT YO COOL. BLEND IN MIXER OR A CUISINART. IN A SEPARATE COOMING POT. ADD SPINCH BLEND, SCALLIONS , 3. CILANTRO,SPICES,SALT CHICKEN, COOK COVERED ON LOW HEAT FOR ABOUT 40 MINUTES. UNCOVER AND ADD BEANS AND 4. COOK FOR FURTHER 20 MINUTES. LADLE IN SOUP DISHES AND 5. DRIZZLE SOME OF THE REMAINING OLIVE OIL ON TOP OF EACH PLATE. 6. YOU CAN OMIT THE CHICKEN, AND REPLACE WITH LENTIL OR 7. COOKED GARBANZO BEANS. |
