Based on a recipe from Cuisine at Home Weeknight Menus . Ingredients:
1 cup chicken broth |
1 tablespoon fresh lime juice |
1 teaspoon sugar |
1/4 teaspoon kosher salt |
1/2 cup rice |
1 tablespoon unsalted butter |
1 (15 ounce) can black beans, drained, rinsed, warmed |
1/4 cup fresh cilantro, chopped |
Directions:
1. Bring broth, juice, sugar, and salt to a boil in a saucepan. Stir in rice, cover and reduce heat to low. Cook15 to 20 minutes, or until liquid is absorbed. 2. Stir in butte. Combine with black beans and cilantro. |
