This dish is similar to Sloppy Joes, without a bun. Kids and teens love it! It's not for the sodium conscious, however it can be lightened up a bit by using sodium free ketchup. My lovely next door neighbor in Springfield, VA gave me this recipe, I believe it came from her sister-in-law, Anne Garrette. It is 6 points per cup for you Weight Watcher's.Serve with a green salad and orange sugar free jello with shredded carrots and mandarin oranges added. Ingredients:
1 lb very lean ground beef |
1 large onion, chopped |
3 large celery, stalks chopped |
1 minced garlic clove (optional) |
1/4 cup packed dark brown sugar |
3 tablespoons worcestershire sauce |
1 cup ketchup (i use 3/4 cup) |
2 (16 ounce) cans pork and beans, undrained (i remove the pork) |
Directions:
1. Brown ground beef; drain. Add onions, celery, and garlic, stir and cook until vegetables are soft. Add Worcestershire sauce, brown sugar and ketchup. Cover and simmer for 15 minutes. Add beans; stir well. Pour into one large or two medium casserole dishes. (I make two; freezes well). 2. Bake covered at 300 for 30-45 minutes, until bubbling. 3. (Freeze after baking, cover and seal well. Reheat in microwave or oven). |
