Beans and Garlic Scampi

This is great for an easy summer meal.
Ingredients:
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon dijon mustard
1 teaspoon white wine
16 ounces pinto beans, drained and rinsed
1/4 cup cilantro
1 tomato, seeded and chopped
1/4 cup green onion
1/2 lb shrimp, large, cleaned and deveined
1 tablespoon olive oil
2 -4 garlic cloves
salt and pepper
5 ounces spinach, baby
Directions:
1. In a large bowl, Combine the olive oil, balsamic vinegar, Dijon mustard and wine.
2. Add beans, cilantro, tomato and green onion to the sauce.
3. Marinate 4-8 hours.
4. In a skillet, heat olive oil, add the shrimp and garlic.
5. Cook 3 minutes each side until done.
6. Salt and Pepper.
7. Add 5 oz. of baby spinach to the bean mixture and stir to mix.
8. On your serving plate, put bean mixture and top with shrimp and garlic.
