Back when we were growing up my mother would fix something like this in the winter. It warms the stomach and most kids will love it. More importantly it is easy to make and cheap to make. Ingredients:
2 (28 ounce) cans pork and beans |
1 medium onion |
1 lb hot dog |
1 (8 ounce) can tomato sauce |
2 tablespoons cooking oil |
2 cups uncooked rice |
1/4 cup butter |
1 3/4 cups water |
1 cup water |
2 teaspoons tabasco sauce |
salt and pepper |
Directions:
1. You have to make the bean mixture up beforehand. Partially drain beans. Cut hotdogs into round slices and chop onion up fairly fine. Put a large skillet or pot on medium-medium high. Add the oil. Add the onions and hot dogs and cook for about 5 minutes. Add the beans and tomato sauce and 1/2 cup of water. Heat until it comes to a boil then turn heat down to a simmer. Add the hot sauce (no it ain’t too much but it really brings out the flavor) and salt and pepper. Simmer for at least one hour to allow the flavors to meld. Add water as needed to keep the sauce loose. 2. About a half hour before eating, put the 1+3/4 cups or water and the 1/2 stick of butter in a pot that has a lid. Bring to boil then add rice. Cook one minute then cover and put on simmer for about 15 minutes. Salt and pepper as desired. When done set aside. When serving, place some rice in the bottom of a bowl and add some bean mixture. Make sure each person gets some of the hotdogs. |
