These simmered beans make a good side to roasts or are great paired with a sandwich for lunch. Ingredients:
2 - 3 c dry white beans |
water to rinse |
water to soak |
water to cover (glub, glub) |
dash of dried mustard (less than 2 t ) |
dash of chili powder (less than 2 t ) |
1 - 2 t vinegar |
smoked meat (hamhock, hambone, smoked turkey thigh, ham slab, you see where this is going) |
Directions:
1. Pick over beans and rinse them once, then soak overnight. 2. Throw the 'fart water' (as grandma used to say) onto your plants, it's got good stuff for growin'. 3. The soaked beans go into a crockpot or slow oven (300 deg) for about 2 - 3 hours with the rest of the ingredients. 4. Debone and defat your meat, add the meat back to the beans. 5. Adjust for S&P and serve. |
