Very refreshing side dish that can also be a whole meal...it's up to you!
Ingredients:
bean n corn n stuff salad
1 can black beans (rinsed well!!)
1 can of corn niblets
5 inches of cucumber 1/2 cubed the other half sliced
10 large green olives sliced sideways (these were the ones in oil from the deli section)
10 black kalamata olives sliced long ways (these were the ones in oil from the deli section)
1/4 red onion chopped
5 green onions sliced on an angle
2 stocks of celery chopped
kraft gourmet greek feta dressing (some - i think any dressing you like could be mixed in)
pepper
i have since added
lentils rinsed well
romano beans rinsed well
field rice medley - stuff i bought at costco
and we have added in either left over chicken, fish and pork to it
can't seem to wreck this one...it's a full vegetarian meal deal without the meat added
Directions:
1. Just mix it all together and let it rest in the fridge...over night is best!
