My family loves Campbell's Bean with Bacon Soup, but I'm not so in love with the preservatives, esp. MSG, that's in it... Soooooooooo, I'm trying my hand at making it myself.. it's cooking right now so this is a test recipe but as soon as it's done I will update here. Read more . :) Ingredients:
1lb. of white beans (soaked overnight, drained and rinsed) |
3 carrots, minced |
5 celery hearts, minced |
1 onion, minced (i used three mexican green onions because it's all i had on hand tonight) |
12 cloves of garlic (i just chopped up the whole thing... looooooove garlic) |
7 or 8 pieces of bacon, crumbled |
1 tbsp. vinegar |
juice from 1 small lemon |
2 drops of liquid smoke |
approximately 1 tsp thyme |
salt and pepper to taste |
Directions:
1. Soak the Beans overnight 2. Drain and Rinse 3. In a large crock pot, put all of the ingredients into the crock pot 4. Cook for 3 hours 5. Take 2 cups of soup out of crock pot, puree in your blender and add back (thickens the soup) 6. Cook longer, if needed, for the consistency you want... remember it's soup. :) 7. Serve with homemade Sourdough bread... ;) 8. Enjoy!! |
