2 carrots, sliced |
1 small onion, chopped |
2 garlic cloves, minced |
1 3/4 cups vegetable broth |
1 (16 ounce) can whole tomatoes, coarsely chopped |
1 (15 ounce) can great northern beans, drained and rinsed and pureed |
1/2 teaspoon dried thyme |
1/2 teaspoon dried sage |
salt and pepper |
chopped parsley (to garnish) |
Directions:
1. Spray large saucepan with cooking spray; heat until hot. Sauté carrot, onion and garlic until onion is tender, about 5 minutes. 2. Stir in broth, tomatoes, and liquid, pureed beans and herbs. 3. Heat to boiling; reduce heat and simmer, covered, until carrots are tender, about 10 minutes. 4. Season to taste with salt and pepper. Serve sprinkled with parsley. |
