This is a recipe I made up using everything in my cupboard, it turned out quite nice... It doesn't really matter about the quantites I think. I put in whatever veg I have and loads of it, then freeze the leftovers. Ingredients:
1 onion |
3 garlic cloves |
1/4 head celery |
2 slices smoked bacon |
4 slices chorizo sausage |
1 (400 ml) can tomatoes |
1 (400 ml) can chickpeas |
1 (400 ml) can chili beans |
2 cups frozen peas |
2 cups frozen bell peppers |
2 carrots |
2 cups sliced mushrooms |
2 sun-dried tomatoes |
1 tablespoon paprika |
1 teaspoon chili |
salt and pepper |
1 cup barley |
1 glass wine |
herbs |
2 teaspoons cumin |
1/2 tablespoon olive oil |
Directions:
1. Fry off first 5 ingredients in a large saucepan. 2. Add the remaining ingedients. 3. Simmer for about an hour. |
