For a nutricious diet, add this recipe! Each healthy serving has 7mg of lutein! Ingredients:
1 tbsp. olive oil or canola oil |
8 minced garlic cloves |
1 medium sized yellow onion(minced) |
4 c. chopped raw kale |
4 c. low-fat, low-sodium chicken or vegetable broth |
2 (15 ounce) cans of white beans, such as cannellini(this is my favorite) |
4 plum tomatoes, coursely chopped |
2 tsp. dried italian herb seasoning |
salt and pepper to taste |
1 c. chopped parsley |
Directions:
1. In a stew pot, add EVOO. 2. Add the garlic and onions, sauteing until the onions are yellow. 3. Stir in the kale, sauteing until the kale in wilted. 4. Add 3 c. of broth, 2 c. of beans, all of the tomatoes, the herbs, and the salt and pepper(pepper flakes add great flavor). 5. This will simmer around 5 min. 6. Add the remaining beans, stirring frequently to thicken the soup. 7. Simmer the soup around 15 min. 8. Add chopped parsley to bowls of soup before serving. Enjoy! |
