1 1/2 lbs swiss chard or 1 1/2 lbs beet leaves |
6 cups chicken broth |
1 garlic clove, crushed |
1 cup cooked white beans |
1/2 teaspoon salt |
1/4 teaspoon white pepper |
grated parmesan cheese (to garnish) |
red pepper flakes (to garnish) |
Directions:
1. Add greens to pot of boiling water and cook 7 minutes. Drain and squeeze well. Bring broth to simmer, add garlic, and greens. Rinse beans and add. Simmer partially covered 10 minutes. 2. Sprinkle with salt and pepper to taste. Garnish as desired. |
