This comes from the Chronic Fatigue Syndrome Cookbook by Mary Hale and Chris Miller.
Ingredients:
4 cups chicken broth
1/2 cup carrot, sliced
1/2 cup onion, sliced
2 tablespoons lemon juice
3 cups white beans, cooked and drained or 3 cups canned white beans
Directions:
1. Combine broth, carrots, onion, and lemon juice in a saucepan.
2. Simmer, covered, until carrots are tender.
3. Stir in beans.
4. Heat thoroughly.
