This bean soup is an amazing Taco soup! Super quick! Ingredients:
1/2 lb lean ground beef |
1 onion, chopped |
1 (8 ounce) can black beans |
1 (8 ounce) can pinto beans |
1 (8 ounce) can kidney beans |
1 (8 ounce) can corn |
1 (10 ounce) can rotel |
1 (1 1/4 ounce) package taco seasoning mix |
1 (1 ounce) package ranch dressing mix |
Directions:
1. In pan, brown ground meat and add onion. 2. Add all other ingredients. *If you drain the cans before adding them at this point add 1 1/2 cup of water. If you did not drain the cans, I like to use the juices for flavor, you probably wont need to add water unless you want your soup soupier. 3. Simmer for 1 1/2 hours. 4. Sprinkle with Cheddar cheese and sour cream. It's also yummy with Crispy Rounds. |
