Bean-sidhe Cake For Samhain |

Be sure to cut a slice for the Bandruhude (Bean-sidhe). Wrap the slice up well and store until next Samhain, to insure the Bandruhude is honoured and does not carry off a member of the household during the new year (Bury the year old slice ritually, and honourably, on Nov. Read more . 1st. This sacrifice is said to appease the Bandruhude.) Ingredients:
1 cup plus 2 tbs dark brown sugar |
butter |
1 tbs water |
1/2 cup ground almonds |
3 eggs, beaten |
3 1/2 cups flour |
2 teaspoons cream of tartar |
1 teaspoon baking soda |
1 cup golden raisins |
1/2 cup candied fruit peel |
pinch nutmeg, ground |
pinch allspice, ground |
Directions:
1. Bring the water, sugar, and butter to a boil. 2. Remove from heat; cool. 3. Stir the flour, soda, cream of tartar, raisins, currants, candied fruit peel, and a pinch of nutmeg and allspice together. 4. Add the almonds and stir well. 5. Into a well made in the center, pour the beaten eggs. 6. Stir well to mix. 7. Pour the batter into a greased and floured 10-inch cake pan. 8. Bake in a 375-degree (F) oven for 1 1/2 hours. 9. Reduce the oven heat to 350-degrees (F) and cook for another 30 minutes. 10. Remove, let sit 10 minutes then turn the cake out onto a rack. 11. After it is cooled, store in an airtight tin. |
