I tossed this together with what was laying around. It can be eaten as a chilled side salad or used as a salsa dip. Spice measurements are approximate since I just toss stuff in a bowl. Ingredients:
1 can black beans, drained and rinsed well |
1 can red kidney beans, drained and rinsed well |
1 cup corn kernals, defrost if frozen |
1 tbsp chili powder |
1/2 tsp dried cilantro or 1 tbsp fresh |
1 dash cayenne pepper |
1 tbsp white wine vinegar |
1 tbsp balsamic vinegar |
Directions:
1. Mix everything together and serve. |
