I got creative. Works best with garbanzos but again, most beans work.
Ingredients:
3 tablespoons balsamic vinaigrette
15 ounces chickpeas, rinsed and drained
1/4 cup green bell pepper, chopped
1/3 cup fresh tomato, diced
1/4 cup baby carrots, finely chopped
1/4 cup black olives, chopped
2 green onions, chopped
salt and pepper
Directions:
1. Mix it all together.
2. Yum.
