I got creative. Works best with garbanzos but again, most beans work. Ingredients:
3 tablespoons balsamic vinaigrette |
15 ounces chickpeas, rinsed and drained |
1/4 cup green bell pepper, chopped |
1/3 cup fresh tomato, diced |
1/4 cup baby carrots, finely chopped |
1/4 cup black olives, chopped |
2 green onions, chopped |
salt and pepper |
Directions:
1. Mix it all together. 2. Yum. |
