This is a great potluck dish, or just one to make for you! If you follow my changes vs. the original recipe, each serving is 2 points. You may need to use a little less Stevia if yours is more concentrated. Ingredients:
1 (15 ounce) can black beans, rinsed and drained |
1 (11 ounce) can white shoepeg corn, drained |
1 (15 ounce) can black-eyed peas, rinsed and drained |
1/2 medium red onion, minced (or to taste) |
1 red bell peppers or 1 yellow bell peppers or 1 orange bell pepper, diced |
1/4 cup red wine vinegar or 1/4 cup white wine vinegar |
1/4 teaspoon stevia (original 1/4 cup sugar) |
1/4 cup olive oil (original 1/2 cup olive oil) |
Directions:
1. Mix all the beans together. 2. For the dressing, dissolve Stevia in vinegar. 3. Add oil. 4. Mix well. 5. Pour over beans. 6. Mix and chill for 1-3 hours. Overnight works even better. |
