Lentils are loaded with soluble fiber, a type that may reduce the risk of heart disease by lowering blood cholesterol levels. Ingredients:
5 cups low-sodium fat-free chicken broth |
1 cup dried lentils |
1/2 medium onion, chopped |
2 tablespoons brown sugar |
2 tablespoons ketchup |
2 tablespoons molasses |
1 to 2 tablespoons prepared mustard |
2 bacon slices, cooked and diced |
vegetable cooking spray |
Directions:
1. Bring first 3 ingredients to a boil in a Dutch oven. Cover, reduce heat, and simmer 45 minutes or until lentils are tender. 2. Stir in brown sugar and next 4 ingredients. Spoon mixture into a 1-quart baking dish coated with cooking spray. 3. Bake, uncovered, at 325°, stirring occasionally, for 1 hour and 15 minutes. |
