This is a different spin on a custard like pie. You can add a couple of drops of pure vanilla for a slightly different taste. Ingredients:
1 unbaked 9-inch pie shell |
2 eggs, (lightly beaten) |
1 cup evaporated milk |
2 cups cooked navy beans (mashed & pushed thru sieve to remove any skins if desired) |
3/4 cup granulated sugar |
1/2 tsp salt |
1/2 tsp fresh ground ginger |
1 tsp ground cinnamon |
1 tsp ground nutmeg |
1/2 tsp ground cloves |
Directions:
1. Preheat oven to 425 degrees. 2. Combine the eggs and evaporated milk in a bowl. 3. Add beans, sugar and all spices. 4. Beat at low speed of a mixer until well blended. 5. Pour imixture into an unbaked pie shell. 6. Bake at 425 degrees for 15 minutes. 7. Reduce heat to 350 degrees and bake for another 35 minutes or until knife inserted in center comes out clean. 8. Serve warm topped with whipped cream or you can let cool |
