BEAN PATTIES WITH TOMATO RELISH This recipe came from an estate sale. I obtained it when I purchased the family collection from the Maxwell Estate in Grand Prairie, Texas in 1981.
Ingredients:
15 ounce can kidney beans rinsed and drained
1 medium tomato finely chopped
1 small white onion finely chopped
1 green bell pepper seeded and finely chopped
2 cloves garlic finely chopped
3 tablespoons cornmeal
1/2 teaspoon dried oregano
1/2 teaspoon dried marjoram
1/2 teaspoon dried thyme
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
tomato relish
2 medium tomatoes chopped
1 tablespoon finely chopped celery leaves
1 tablespoon finely chopped fresh basil
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon granulated sugar
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
Directions:
1. Mash beans with a fork and mix in the vegetables, cornmeal and seasonings.
2. Form into 6 patties then fry in lightly oiled skillet until lightly browned on both sides.
3. Combine all relish ingredients and stir to combine then serve over bean patties.
