A quick bean dip with an added punch. Not sure how many it serves, but it makes quite a lot.
Ingredients:
7.5 oz chorizo (hot or mild, your choice)
2 16 oz cans refried beans
1 16 oz can diced tomatoes with chili's
1/2 tsp cumin
2 tsp lime juice
Directions:
1. Brown chorizo
2. Add refried beans and mix well
3. Add diced tomatoes & chilis, cumin, lime juice and mix well
4. Warm gently to bubbling
5. Place in a serving dish and sprinkle with mexican blend cheese
6. Or, spread over chips and cover with cheese.
