This bean dip is good with tortilla chips, but to keep it healthy, it is GREAT with celery sticks. The longer it sits, the better it gets. I found this recipe on Obesity Help. I have not tried this recipe, but I'm posting it for safe keeping.
Ingredients:
15 ounces fat-free refried beans (1 can)
1/2 cup sweet onion, finely chopped (minced if possible)
jalapeno pepper, diced (i use the pickled ones in a jar, as many or as few as you like)
1/2 cup of your favorite picante sauce
1/2 ounce taco seasoning (1/2 pack)
1 dash cumin
1/2 cup shredded cheddar cheese or 1/2 cup monterey jack cheese
Directions:
1. Mix first 5 ingredients in a sauce pan over medium low heat. Simmer about 10 minutes until heated well. Add shredded cheese, stir well, turn heat to low and simmer for about 5 more minutes.
2. Remove from heat and place in a plastic container with lid. Serve right away or allow to sit for awhile.
