This is an easy and tasty bean dip that my friend gave me. The prep and cooking time includes the marinating time. Enjoy! Ingredients:
1 (15 1/2 ounce) can black-eyed peas |
1 (15 1/2 ounce) can black beans |
1 (15 1/2 ounce) can white shoepeg corn |
1 (4 ounce) jar pimentos, chopped |
1/4 cup red onion, chopped |
1 cup sugar |
1 cup cider vinegar |
1/2 cup olive oil |
Directions:
1. Rinse beans and corn then combine all ingredients. Combine 1 cup cider vinegar and 1 cup sugar in small saucepan. Bring to boil and cook until sugar is dissolved then pour over ingredients. Add 1/2 cup olive oil. Stir and marinade over night. Enjoy with your favorite chips. |
