My adaptation to a savory muffin from Recipelover’s Basic Sweet Version Muffin recipe It's moist flavorful and healthy. I can't taste the bean. Ingredients:
2 cups black-eyed peas |
3 large eggs |
1 teaspoon baking powder |
1/2 teaspoon salt |
1 tablespoon flax seed meal |
1/2 teaspoon garlic powder |
1 teaspoon mixed italian herbs |
1/2 cup cheddar cheese, shredded |
1 teaspoon red pepper flakes |
1/4 teaspoon pepper |
Directions:
1. beat on high eggs and beans til mostly smooth 2. add in rest except cheese, blend. 3. stir in cheese. 4. put into 8 muffins cups. 5. bake 350 for about 20-25 minutes. 6. until knife comes out clean. |
