Delicious and fresh vegetarian kidney bean burritos Ingredients:
3 cups red kidney beans |
1 medium onion, chopped |
1 tsp taco seasoning |
1 cups ready made salsa |
8 flour tortillas |
2 cups lettuce, shredded |
2 medium tomatoes, diced |
1 cup green pepper, diced |
Directions:
1. Chop onion, place into pan with 1 tbsp oil and fry until clear 2. Add kidney beans, roughly mashed, and salsa 3. Stir in taco seasoning, heat mixture through 4. Chop vegetables and heat tortillas on plate in microwave for around 30 seconds 5. Remove bean filling from heat, spoon small amoutn of filling into each tortilla 6. Top with fresh salad vegetable and serve |
