I haven't tried these yet, I'm posting as a request. The recipe comes from a cookbook called Wholly Frijoles! - The Whole Bean Cookbook by Shayne Fisher. note The yield amount was estimated! Ingredients:
1 cup packed brown sugar |
2 large eggs |
1/2 cup butter |
1/2 teaspoon vanilla extract |
3/4 cup cooked and pureed navy beans |
1 cup mashed ripe banana |
1 teaspoon baking soda |
1 3/4 cups all-purpose flour |
1/2 cup quick-cooking oats |
1 cup chocolate chips |
Directions:
1. Preheat oven to 375°F. 2. Cream together sugar, eggs, butter and vanilla. 3. Add beans and banana and beat until fluffy. 4. Add baking soda, flour and oats; blend until smooth. 5. Stir in chocolate chips. 6. Drop by tablespoonfuls onto a baking sheet. 7. Bake for 15-20 minutes or until golden. 8. ~NOTE~You may use canned navy beans, but rinse well before you puree. 9. ~NOTE~You may substitute raisins for the chocolate chips. |
