Bean and Tomato Soup (Large Volume) |

A large volume, tasty vegetarian soup. 500g of small pasta shapes may be added to this soup to make it extra filling. Ingredients:
1 (3 kg) can tomatoes |
1 (3 kg) can baked beans |
1 bunch celery, chopped |
1 kg carrot, grated |
4 onions, chopped |
2 tablespoons olive oil |
1 liter vegetable stock |
1 teaspoon salt |
Directions:
1. Brown onion, celery and carrot together in olive oil. 2. Add tin beans and tin tomato. 3. Add stock until desired consistency is reached, more if pasta is added. 4. Cook until done. |
