A hearty, warming stew of great northern beans with kielbasa, lemon, and thyme. Ingredients:
3 cups great northern beans, soaked 8 hours to overnight |
1 large onion, diced |
4 garlic cloves, minced |
2 lemons, juiced |
2 1/2 tablespoons olive oil |
2 teaspoons fresh thyme, chopped |
4 cups chicken broth |
16 ounces kielbasa, sliced |
1 teaspoon cumin |
1 teaspoon dried oregano |
2 basil leaves, cut in thin ribbons |
salt and pepper, to taste |
Directions:
1. Heat a dutch oven over medium heat. 2. Add olive oil, then add onion and garlic. Saute until soft. 3. Remove onions and garlic, add kielbasa and evenly brown. 4. Add all remaining ingredients to the pot and simmer for at least 2 hours, stirring frequently. |
