20 Minute Meals Ingredients:
1 small red onion, thinly sliced |
1 (15 ounce) can black beans or 1 (15 ounce) can kidney beans, drained and rinsed |
1 (11 ounce) can mandarin orange sections, drained |
1/4 cup fresh cilantro leaves |
1/3 cup fresh lime juice |
salt and pepper |
Directions:
1. Soak onion in ice water 10 minutes. Drain and pat dry with paper towels. 2. Place in a medium bowl and add remaining ingredients. Toss to mix. |
