An easy crock pot vegetarian chili Ingredients:
1 teaspoon olive oil |
3 ounces red wine |
2 (15 ounce) cans kidney beans |
1 1/2 cups vegetable broth |
6 ounces tomato paste |
1 cup frozen corn |
2 medium onions, chopped |
5 garlic cloves, minced |
1 green bell pepper, chopped |
1 celery rib, chopped |
6 roma tomatoes, chopped |
1 teaspoon salt |
1 teaspoon chili powder |
1/2 teaspoon black pepper |
1/4 teaspoon cumin |
1/4 teaspoon red pepper |
1/4 teaspoon oregano |
1/4 teaspoon coriander |
Directions:
1. Cook onions and garlic in wine and oil. 2. Add to crock pot along with remaining ingredients. 3. Cook on low for 8 hours. |
