An easy crock pot vegetarian chili
Ingredients:
1 teaspoon olive oil
3 ounces red wine
2 (15 ounce) cans kidney beans
1 1/2 cups vegetable broth
6 ounces tomato paste
1 cup frozen corn
2 medium onions, chopped
5 garlic cloves, minced
1 green bell pepper, chopped
1 celery rib, chopped
6 roma tomatoes, chopped
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon black pepper
1/4 teaspoon cumin
1/4 teaspoon red pepper
1/4 teaspoon oregano
1/4 teaspoon coriander
Directions:
1. Cook onions and garlic in wine and oil.
2. Add to crock pot along with remaining ingredients.
3. Cook on low for 8 hours.
