Bean and Cheese Quesadillas |

Low-cal, Low-fat, Mexican yumminess! Ingredients:
4 tortillas |
16 oz refried beans |
1 cup cheese, shredded |
2 cups green leaf lettuce, shredded |
1 cup salsa, prepared |
1/2 avocado, peeled, pitted, & diced |
1/4 cup fat free sour cream |
2 tbsp cilantro, fresh, chopped |
Directions:
1. Spread each tortilla with a portion of refried beans and top with 1/4 cup of cheese. 2. Fold in half to create a half moon. 3. Place a large, non-stick skillet over medium low heat. 4. Working in batches, cook tortillas 2 min on each side or until lightly browned and cheese is melted. 5. Cut each tortilla into 4 pie-shaped wedges and place on a plate. 6. Top with even portions of shredded remaining ingredients. |
