Bean and Bacon Soup Ingredients:
4 strips bacon |
1 lb navy beans |
3 small chopped carrots |
2 chopped celery stalks |
1/2 chopped green pepper |
1 large chopped onion |
1 tsp bay leaf |
1 tbsp parsley |
1/2 tsp ground thyme |
1/2 tsp ground sage |
1/2 tsp basil |
1 cup tomato juice |
6 cups water |
Directions:
1. Soak beans in water overnight covered by about two inches. 2. Drain beans add to pressure cooker with six cups of water and bayleaf 3. Fry bacon and take out before it is crispy. Cut up and add to beans. 4. Fry onion and green pepper in bacon drippings. Add with drippings to beans. 5. Add the rest of the ingredients. 6. Cook in the pressure cooker for 20 minutes. |
