This is based on a local restaurant's Monster Salad which we love. It is colorful, filled with goodies, and filling. It's one of the easy to tweak to your own taste and preference meals. Ingredients:
1 bag pre-washed organic baby greens |
1 pound cooked chicken cut into bite-sized pieces |
1/2 cup chopped nuts of your preference |
1 cup corn kernels |
1 cup pitted dates cut into thirds |
1/2 cup of dried cherries |
1/2 pound goat cheese broken into bits |
shredded cheese of your choice to garnish the top (we prefer a gently flavored one to not overwhelm the other cheese) |
honey mustard dressing |
serve with toasted pitas, grain bread, bread sticks, etc |
Directions:
1. In a large bowl spread the greens 2. Layer on the chicken, nuts, corn, dates, dried cherries, and goat cheese. 3. Top with some shredded cheese and dressing. 4. Toss. 5. Suggestion: Take it easy on the initial salad dressing to just dampen the salad and pass more so all can adjust it to personal taste. |
