Nice spicy marinade sauce - don't just use it for veggies try it on chicken or other meats. Ingredients:
8 cherry tomatoes, halved |
1 green pepper, seeded,cut into 8 pieces |
8 button mushrooms |
8 broccoli florets |
1 onion, cut into 8 wedges |
8 green onions, diced (green and white parts) |
1 onion, diced |
2 scotch bonnet peppers or 2 jalapeno peppers, seeded and minced |
3/4 cup soy sauce |
1/2 cup red wine vinegar |
2 tablespoons vegetable oil |
3 tablespoons brown sugar |
1 tablespoon dried thyme or 2 tablespoons chopped fresh thyme |
1/2 teaspoon ground cloves |
1/2 teaspoon nutmeg |
1/2 teaspoon cinnamon |
Directions:
1. Thread veggies onto 4 skewers, alternate the veggies. 2. Place skewers in a casserole dish. 3. Place all the marinade ingredients in a food processor and process for about 20 seconds. 4. Pour over the skewered veggies. 5. Marinate 3-4 hours in the refrigerator. 6. BBQ Skewers about 4 minutes each side (Save the marinade for another day). |
