I had these at the local Southern BBQ and decided I could make them at home. My family says they're much better! Ingredients:
3 large pork loin chops |
salt |
pepper |
your favorite bbq sauce |
olive oil |
1 pkg. shredded cabbage and carrots for cole slaw |
3 cloves garlic, minced or 2 tsp. of minced garlic |
1 tsp. cumin |
1 tsp. salt |
10 egg roll wrappers |
canola oil for frying |
Directions:
1. Salt and pepper the chops and bake at 350 for about an hour, maybe a little less 2. Set aside to cool 3. Put a little olive oil in a skillet over medium hi heat 4. Pour in the entire bag of cole slaw mix 5. Add garlic, cumin and salt 6. Cook until cabbage is just tender, remove from heat and cover 7. Pull apart the pork or chop or slice into small pieces 8. Mix the pork with the BBQ sauce, just to coat it, not saucy 9. Place one heaping tablespoon of slaw mix onto egg roll wrapper, bottom half, 1 inch from each side 10. Top with layer of pork 11. Roll bottom of wrapper over filling, then fold in the sides 12. Bush a little water on the top edge of the wrapper and finish rolling the wrapper 13. Fry till golden brown on each side 14. I use a large cast iron skillet, Fry Daddy would work well too 15. I usually make my own Chipotle Dipping Sauce of sour cream, mayo, honey, salt, adobe sauce and a pureed chipotle pepper but I'm going to try Seafoodlover's Chipotle Ranch Dressing the next time I make them |
