BBQ Corn and Black Bean Quesedillas |

This is another great recipe from Bick's - fantastic flavor - Ingredients:
1 (540 ml) can black beans, drained and rinsed |
1/2 cup bick's sweet corn relish |
1 teaspoon cumin |
1 teaspoon chili powder |
1/4 cup cilantro or 1/4 cup parsley, chopped |
1 tablespoon lime juice |
1 jalapeno pepper, finely chopped |
2 green onions, sliced |
1/4 cup prepared salsa |
bick's hot pepper rings |
4 large flour tortillas |
2 cups cheddar cheese, shredded |
sour cream and guacamole (optional) |
Directions:
1. Combine first 9 ingredients in medium sized bowl. 2. Lightly oil grill or large frying pan and preheat to medium high. 3. Sprinkle 1/4 cup cheese on half of tortilla, cover with about 1/2 cup black bean mixture and top with another 2 tablespoons shredded cheese. 4. Place Bick's hot pepper rings over cheese and fold the remaining half of the tortilla over so that it form a half moon. 5. Place on hot grill. Grill until the cheese is melted and bubbly, about 2 minutes. 6. Cut into wedges and garnish with sour cream and guacamole. |
