Perfect for leftover chicken. Ingredients:
1/2 cup chicken |
2 tsp bbq sauce |
1 tbsp roasted red peppers |
1 tsp sun dried tomato |
2 flour tortillas |
3/4 c mozzarella cheese |
Directions:
1. Mix chopped or shredded chicken with BBQ sauce 2. Place first tortilla on griddle 3. Top with half of the cheese, all of the BBQ chicken, chopped red peppers and diced sundried tomatoes 4. Top with the remaining cheese and the other tortilla 5. Cook on medium heat until the bottom tortilla is crispy and the cheese is melted 6. Flip and cook until the bottom tortilla is crispy and the cheese is melted 7. Cut in 6 wedges |
