I know there are a lot of yummy variations of this, but thought I would post my own. Simple, versatile, healthy-and there you go! I used slices of red and green pepper as well as red onion. My DH, who doesn't like peppers or onions, suggested I use more-it was excellent with the combo of chicken, pineapple and BBQ sauce. No pots, pans or bowls and on the grill-my favorite way of cooking! Make as many as you want, no brainer, I made 8 for lunches.
Ingredients:
4 small skinless chicken breast halves
4 pineapple rings
1/2 green pepper, sliced
1/2 red pepper, sliced
1/2 red onion, sliced (optional)
4 tablespoons barbecue sauce (your favorite)
Directions:
1. Preheat your grill to medium.
2. Make sure your chicken breasts are about the same size and thickness (pound out ends that are too thick).
3. Place a chicken breast in the middle of a large sheet of heavy duty foil (important).
4. Top with pineapple rings, peppers & onions and BBQ sauce.
5. Double fold top and ends to seal packet, leaving room for heat circulation.
6. Put on grill of 15 minutes, I rotated my packets mid way because my grill doesn't cook evenly.
7. Remove and of course you want to make sure the chicken is cooked all the way through, mine was perfect.
8. Now you can serve it as is, and it is a lovely presentation. I personally felt the juices left at the bottom of the packet were too valuable to waste, so I cut up the chicken, pineapple and veggies and mixed them with the juices. YUMM! I didn't do it at the time, but I'm sure it would be wonderful served over rice. Don't pass up this super easy, healthy, dish free entree!
