Bbq Breakfast Pepper Baked Eggs |

This is my son's favourite recipe for a special breakfast. I got the recipe from Ted Reader's Cookbook Hot, Sticky and on Fire . It has good 'wow' factor. Ingredients:
1 large red, yellow or orange pepper |
3 tbsp. chopped red onion |
4 button mushrooms, sliced |
1 tbsp. olive oil |
2 tsp. chicken rub spice |
1 tbsp. chopped fresh thyme |
2 eggs |
freshly ground pepper to taste |
4 tbsp. shredded cheddar cheese |
Directions:
1. Preheat BBQ to medium high. 2. Cut the pepper in half and carefully remove the seeds and ribs. 3. Sauté the onions and the mushrooms in the olive oil and add the Chicken rub spice when almost done. Add the fresh thyme. 4. Grill the peppers, turning twice, until they just start to get soft, about 10 minutes. 5. Place half of the mushroom, onion mixture in each pepper half. Crack an egg into each pepper and sprinkle with pepper. 6. Close the lid of the grill and cook until the egg sets. Add grated cheese on top until melted. 7. Serve and enjoy! |
