Ingredients:
10 pounds short ribs of beef, 2 inches thick |
2 tablespoons salt |
2 tablespoons brown sugar |
1 tablespoon garlic |
1 teaspoon thyme leaves |
1 tablespoon ancho powder |
3 tablespoons french's mustard |
3 tablespoons ketchup |
1 teaspoon garlic powder |
2 cup apple cider |
Directions:
1. BBQ Beef Short Ribs: 2. Mix all seasoning in a large bowl. Add short ribs and toss to coat evenly. Allow to sit for one hour before smoking. Build a hickory fire in grill on one side only. Place the beef ribs on the grill on the opposite side of the fire and close off the air so the fire goes down. Maintain a temperature of 275 degrees for 3 hours, basting with mop every 15 minutes for the last 45 minutes. 3. Short Rib Mop: 4. Mix all ingredients together. |
