This ridiculously easy crock-pot meal is good both hot and cold. I usually serve it with corn bread. Ingredients:
1 lb lean ground beef (fresh, thawed or still frozen) or 1 lb ground buffalo meat (fresh, thawed or still frozen) |
60 ounces canned pinto beans |
1 1/2 cups frozen chopped onions (or fresh onion, chopped) |
1 1/2 cups barbecue sauce (i use kraft original to make it gluten free) |
Directions:
1. Put ground beef in the crock pot. I don't brown it, or even thaw it. If it's frozen, it's fine to leave it in one big lump. 2. Drain & rinse the beans, then pour over beef. 3. Add the chopped onion and barbeque sauce. Stir the onions, beans and sauce if you'd like. 4. Cover and cook. I cook it on high 5 - 6 hours if the beef is frozen. 5. Before serving, take out the beef and break it into bite-sized chunks. Return to the pot & stir. 6. Serve hot or cold. |
